Ingredients:
2 lb chicken chunks (white or dark meat (or both), depends on your preference.)
1 c pineapple juice
1/4 c brown sugar, firmly packed
1/3 c soy sauce (i’m gonna try a low sodium version)
1 med. can pineapple chunks (optional)
1 smonion, chopped (i will use a vidalia) (optional)
green pepper, chunks (optional)
Directions:
Prepare the Ingredients:
If not already done, chop the sweet Vidalia onion and green pepper into desired sizes.
If using fresh pineapple, peel and cut it into chunks.
Combine Ingredients in the Slow Cooker:
In a large slow cooker or crockpot, place the chicken chunks at the bottom.
Pour in the pineapple juice, ensuring it covers the chicken evenly.
Sprinkle the firmly packed brown sugar over the chicken.
Add the low-sodium soy sauce for a savory touch.
If desired, include the optional pineapple chunks, chopped Vidalia onion, and green pepper.
Mix Well:
Gently stir the ingredients in the slow cooker, ensuring an even distribution of flavors.
