Ingredients
1 cup fresh cranberries
1/4 cup honey
1 cup unsalted butter, softened
1/4 teaspoon cinnamon
Pinch of salt
Preparation
Rinse the cranberries and place them in a small saucepan over medium heat.
Add the honey to the cranberries and cook until the cranberries begin to pop and soften, about 5-7 minutes.
Remove from heat and let the cranberry mixture cool slightly.
In a mixing bowl, beat the softened butter until creamy.
Add the cooled cranberry mixture, cinnamon, and a pinch of salt to the butter.
Mix until well combined, leaving some chunks of cranberry for texture.
Spoon the cranberry honey butter into a mason jar and swirl the top for a decorative finish.
Seal the jar and refrigerate for at least an hour before serving to allow the flavors to meld.
Variations & Tips
For a citrus twist, add a teaspoon of orange zest to the cranberry mixture. If you prefer a smoother texture, blend the cranberry mixture completely before adding it to the butter. For a spicier version, consider adding a pinch of ground ginger or nutmeg. This butter can also be made with dried cranberries if fresh ones are not available; simply soak them in warm water for 10 minutes before using.
